This wine perfectly reflects the authenticity of Capaccia. The altitude of the vineyards allowed for a much longer growing season because we had cool nights even during the torrid heat of the 2012 growing season. The clay in the soil increased our water holding capacity so the roots were able to find water even in the dry summer. The vines suffered very little stress and were able to reach perfect maturation. We aged the Chianti Classico in large wine casks to ensure that our delicate fruit notes were not overpowered by the oak tannins. Our goal was to create a wine that reflects our terroir and has the structure to be cellared long after its release.
