During a hot growing season like 2011, the vineyards of Capaccia benefit from their high altitude and cooler nights. The ability to slow down the maturation allows for the development of more complex phenolic compounds. The bouquet possesses the dark fruit notes that only come with a long and healthy grape ripening. With the intensity of the fruit we were able to follow a more pronounced barrel program, using both new and second pass barrels. We have found that the larger 300 liter barrels create the most elegant Riserva. The goal is to allow the oak aroma to marry perfectly with the rich fruit notes in the wine.

Whole berry destemming, fermented in temperature controlled stainless steel tanks for 2 weeks, pump-over and delestage throughout the fermentation
18 months in 300 liter French oak barrels, 50% new and 50% second pass, then another 6 months in 1500 liter traditional wine casks
